Sydney Fish Market (SFM) was established by the New South Wales Government in 1945. From 1945 until 1999, the selling of seafood in New South wales was regulated by the government and all seafood that landed in New South Wales was required to be sold through the New South Wales Fish Marketing Authority.

In 1994, SFM became a privately owned company and in 1999, the marketing and selling of seafood was deregulated, allowing seafood to be sold through SFM.
 
SFM is the largest market of its kind in the southern hemisphere and the world's second largest seafood market in terms of variety outside Japan. SFM auctions over one hundred species daily from sources both nationally and internationally. SFM trades close to 13,000 tonnes of seafood annually. 

Today SFM employs approximately 57 staff who are responsible for organising the weekday wholesale auction, promoting SFM as the centre of seafood excellence and the only destination to buy and sell seafood. SFM is also promoted as a tourist location and the place to buy Sydney's freshest seafood. It is also the home of the Sydney Seafood School.
