About the Project

As part of the corporate planning strategy, Sydney Fish Market has decided to broaden its functionsand develop a series of branded, "value-added" seafood products.

To achieve these potential new products, there is a need to understand the safety and quality issues surrounding them both in terms of the raw material for use in the value-added products and in the end product themselves.

Project Objectives

1. An assessment of the food safety risks associated with the primary processing of the target species.

2. Identification and resolution of the critical quality issues associated with the primary processing of the target species.

3. An assessment of the food safety risks associated with the secondary processing of the proposed products.

4. Identification and resolution of the critical quality issues associated with the secondary processing of the proposed products.

5. Application of objectives 1-4 in the product development process leading to the production of Sydney Fish Market branded, value-added products.

6. Capacity building within Sydney Fish Market and Southlands Fish Supplies regarding the development of value-added seafood product lines.

Increased Consumption of Canned Tuna by Demonstrating Improved Erythrocyte Omega-3 Fatty Acid Profile in Adult People

About the Project

As market leader in sales of canned fish in Australia (through the John West brand), the prime objective for Simplot is to ensure a continued growth by keeping key existing categories relevant and attractive to customers and consumers.

Health is one of the key drivers of consumer demand for canned fish and this research will assist in providing relevant health messages to inform consumers of the importance of including canned fish in their diet. This will be achieved by demonstrating that regular consumption of John West canned fish can lead to long-term increases of long chain omega-3 fatty acids (omega-3) into erythrocytes which are consistent with an improved health status.

The follow-up study is a unique approach to determine the bioavailability of omega-3 in canned fish; it will promote processed fish as an alternative to fish oil supplements. Furthermore to build and increase the consumer awareness of fish and processed fish as a good source of omega-3 is a chance to boost the sales not only in this category, but also offers flow-on benefits for the rest of the seafood industry.

Project Objectives

1. Demonstrate that regular consumption of canned fish leads to long-term increases in incorporation of long chain omega-3 fatty acids into erythrocytes.
